📝 Ingredients
For the Salmon:
-
2 salmon fillets (6 oz each), skin-on or skinless
-
Salt and black pepper to taste
-
½ tsp paprika (optional, for color)
-
1 tbsp olive oil
-
2 tbsp unsalted butter
For the Garlic Butter Spinach & Mushrooms:
-
8 oz cremini or white mushrooms, sliced
-
3 cups fresh spinach
-
3 garlic cloves, minced
-
2 tbsp fresh lemon juice
-
1 tbsp fresh parsley, chopped
-
Lemon wedges for serving
👩🍳 Instructions
1. Prepare the Salmon
-
Pat salmon dry with paper towels. Season both sides with salt, pepper, and paprika.
2. Sear the Salmon
-
Heat olive oil in a large skillet over medium-high heat.
-
Place salmon skin-side up (if using skin-on). Sear for 4–6 minutes until golden.
-
Flip, reduce heat to medium, and cook for 2–4 more minutes until cooked through.
-
Remove salmon and set aside.
3. Sauté Mushrooms & Spinach
-
In the same skillet, melt butter. Add mushrooms and cook until browned (~5 mins).
-
Add garlic and cook for 1 minute until fragrant.
-
Add spinach and toss until wilted (~2 mins).
-
Stir in lemon juice and parsley.
4. Serve
-
Return salmon to the skillet or plate the spinach-mushroom mixture first, then top with salmon.
-
Garnish with lemon wedges and extra parsley.
💡 Pro Tips
-
Don’t overcrowd the pan to get a perfect sear on the salmon.
-
Skin-on salmon yields crispier texture; skinless absorbs more garlic-butter flavor.
-
Add cream to the spinach-mushroom mix for a richer sauce.
Serve with mashed potatoes, quinoa, or crusty bread to soak up the delicious garlic butter sauce! 🍋🧄
