2 tablespoons (25g) tomato sauce
-
1 teaspoon (20g) tomato paste
-
1 tsp paprika
-
½ tsp black pepper
-
½ tsp cumin

Salt to taste

Chopped parsley for garnish
👩🍳 INSTRUCTIONS
1. Prepare the Potato Layer:
-
Boil the peeled, cubed potatoes in salted water until tender (about 15–20 minutes).
-
Drain well, then mash until smooth.
-
Stir in the grated cheddar cheese, vegetable oil, and salt until fully combined. Set aside.
2. Make the Beef Filling:
-
Heat 2 tablespoons of oil in a large skillet over medium heat.
-
Add the chopped onion and cook until soft and translucent.
-
Add the ground beef and cook until browned, breaking it up as it cooks.
-
Stir in the diced green and red peppers, and minced garlic. Cook for 5–7 minutes until peppers soften.
-
Add the tomato sauce, tomato paste, paprika, black pepper, cumin, and salt. Cook for another 5 minutes, stirring occasionally.
-
Stir in chopped parsley, if using. Remove from heat and let cool slightly.
3. Assemble the Potato Roll:
-
Preheat your oven to 375°F (190°C).
-
Lay a large sheet of parchment paper on a clean surface. Spread the mashed potato mixture into a rectangle about ½-inch thick.
-
Spread the beef filling evenly over the potato layer.
-
Using the parchment paper to help, carefully roll the potato layer over the filling, like a jelly roll, until sealed.
-
Gently transfer the roll to a baking sheet, seam-side down.
4. Bake:
-
Bake for 25–30 minutes, or until the outside is lightly golden.
-
Let it rest for 5–10 minutes before slicing.
5. Serve:
-
Garnish with extra parsley and serve warm.
💡 Tips:
-
For a crispier exterior, brush the roll with a little oil or melted butter before baking.
-
You can prepare the potato and beef filling a day ahead for easy assembly.
-
Customize the filling with mushrooms, corn, or your favorite spices.
This potato roll is hearty, cheesy, and packed with flavor — a true crowd-pleaser!
